HOME MADE
BEEF FRIED RICE WITH SNOW PEAS
(INGREDIENTS)
2-lbs steak tips
4-cups of white rice (5 minute bags of rice Easier)
½ cup of soy sauce
4- Ounces of bean sprouts
1-can water chestnuts (4 ounces)
1-small onion
2-eggs
Salt & pepper
8-ounces of fresh snow peas
1-can of peas (optionally)
2-ounces of scallions
¼ cup of vegetable oil
2-table spoons rice wine vinegar
Any other cooked vegetables that you like can be added to you rice. Example broccoli, carrots ect…
Preparing the beef
Cut up steak into bite size pieces, then heat up a skillet pan with a drop of vegetable oil, add the cut up beef with salt & pepper, followed by ¼ soy sauce let simmer for about 3 to 6 minutes until fully cooked , place beef aside for now.
Next boil white rice for about 4 to 6 minutes please note to add salt to the pan as the rice is cooking, when rice is done, place aside while preparing other ingredients.
Take small onion and scallions dice into small pieces, then take your snow peas and peal the side off that looks like a string you don’t want to eat those makes them a little tough for eating.
In a small pan beat 2 eggs adding salt and pepper to them and scramble eggs for about 2 to 3 minutes on medium heat ,set aside, drain your can peas if you using them and get ready to start cooking your fried rice.
Assembling and cooking your fried rice
Now you need a very large deep skillet pan or a wok both of these will work fine, add ¼ cup of vegetable followed by your onions, water chestnuts, scallions, pea pods cook and stir on a low heat for about 2 to 3 minutes until onions are soft.
Next add beef and drained rice followed by peas, salt and pepper; now you ready to add 2 table spoons of rice wine vinegar, followed with ¼ cup soy sauce note you can cut down the amount of soy sauce if you want your rice to be whiter and less salty.
While stirring and mixing really well, you need to add your scrambled eggs to the mixture and continue, cooking and stirring well for about 5 to 7 minutes on a medium to high heat this will fry the rice nicely, be careful you don’t burn the rice during this process.
You should taste as you cook your pallet will tell you if you need to add more seasoning
Once you feel everything is incorporated, and cooked, to your desire, add to a large round bowl cut up some uncooked scallions to the top, as a garish this can be served as a side dish or main course.
(Cost is about 8.50 and feeds 4 adults)
